A feast of traditional recipes from the “Old Country”, the signature  “2005” Truffle pictured above is a scrumptious combination of marzipan, hazelnuts and nougat covered in dark chocolate.  All Hermine&#8217;s confections are hand  made in her commercial kitchen with fresh ingredients. What could be more appropriate for Idaho than Hermine&#8217;s creative artistry for her “U.S. #1 Idaho potatoes, hand sculpted of  marzipan and rolled in cocoa powder to simulate the earth.</p>

<p>Another mainstay, this perennial favorite is based on the traditional German honeycake or cookie. It consists mainly of honey, five different spices and unbleached flour. Lebkuchen was developed in Germany in the 14th century to be a naturally-preserved food for traveling monks. To the small heart shapes that Hermine makes for her version, she then adds a delicious covering of dark chocolate that enhances the honey and spice taste, and tops it off with an almond which has been hand roasted by in her kitchen. Also you can special order many larger sizes of lebkuchen hearts, as well as simple rectangles, covered in either chocolate or with a plain lemon glaze, and nicely decorated with almonds. Hermine&#8217;s lebkuchen products are certified by the National Honey Board and they proudly display their mark.</p>

			<content:encoded><![CDATA[<p>Although it is believed to have originated in Persia (present-day Iran) and to have been introduced to Europe through the Turks, there is some dispute between Hungary and Italy over its origin. Marzipan became a specialty of the Baltic Sea region of Germany. In particular, the city of Lübeck has a proud tradition of marzipan manufacture (Lübecker Marzipan). The city&#8217;s manufacturers like Niederegger still guarantee their Marzipan to contain two thirds almonds by weight, which results in a juicy, bright yellow product.</p>
<p>Another possible geographic origin is Toledo, Spain (850-900, though more probably 1150 during the reign of Alfonso VII, then known as Postre Regio instead of Mazapán) and Sicily (1193, known as panis martius or marzapane, i.e. March Bread). In both cases, there is a reason to believe that there is a clear Arabic influence for historical reasons(both regions were under Muslim control) and there are also mentions in The Book of One Thousand and One Nights of an almond paste eaten during Ramadan and as an aphrodisiac. Other sources establish the origin of marzipan in China, from where the recipe moved on to the Middle East and then to Europe through Al-Andalus. In Toledo, Mazapán is also one of the city&#8217;s products. Almonds have to be at least 50% of the total weight, following the directives of Mazapan de Toledo regulator counseil.</p>
<p>Historically, the city of Königsberg in East Prussia was renowned for its Marzipan production. Today, the term Königsberger Marzipan refers to a special type of Marzipan in Germany.<br />
The EU mapped in marzipan. Made by the Budapest Marzipan MuseumUnder EU law, marzipan must have a minimum almond oil content of 14% and a maximum moisture content of 8.5%. Optional additional ingredients are rosewater, honey, pistachios, preservatives, and sometimes hazelnut. In the U.S., marzipan is not officially defined, but it is generally made with a higher ratio of sugar to almonds than almond paste. One brand, for instance, has 28% almonds in its marzipan, and 45% almonds in its almond paste. However, in Sweden and Finland &#8220;almond paste&#8221; refers to a marzipan that contains 50% ground almonds, a much higher quality than regular marzipan.</p>

<p>Hermine’s Old World Confections was founded in 1988 in Coeur d’Alene, Idaho by Hermine Sittle. Hermine immigrated to the United States in 1963 as the bride of an American soldier. As she settled into life in America, she often remembered when she was a child and young woman in Germany, and how much she adored Marzipan candies which were a luxury at the time and prohibitively expensive.</p>
<p>One piece of knowledge Hermine brought with her from Germany was how to make Marzipan, and she never lost her love for creating savory Marzipan recipes. Finally, she felt compelled to offer her extraordinary candies to discerning customers which led to the opening of her Coeur d’Alene store.  Prior to opening, she consulted with experts at Washington State University and received confirmation that her candy is safe and wholesome.</p>
<p>Over the years, Hermine has had so many loyal and returning customers that she has decided to open up her state of the art kitchen to the world through MarzipanLove.Com.</p>
